You can use a switch, but you’ll have to be very careful to make sure you never switch it when the amps are powered up. Also you must be aware that having a switch in the line between an amp and a speaker is not a good idea. A switch can have resistance and it’s contacts can pit and oxidize over time. The more current that runs through them, the more likely this is.
That said, many receivers have built in speaker switches, but mainly these are lower powered receivers and not fussy higher end amplifiers. If you never flip the switch when the amps are on, you’ll lessen the possiblity of arcing and pitting. A switch has no polarity, so it doesn’t care if you’re switching speakers or amps. A speaker switch can function just fine as an amplifier switch. There are another few things to consider. Many amps are not happy being powered without a load. Even if you power down your amps before throwing the switch, you should only have one amp on at a time.

As always, my budget is tight, my Electronics knowledge is not very extensive but with 1h or so of researching a specific subject I’m capable of understanding enough to engage myself in a discussion and although I have good soldering skills for minor things, my understanding of circuits schematics is very limited, so reading one is kind of like reading Spanish I’m Portuguese, so I can understand the majority of it but the probabilities of making a bad interpretation is very high.
I have 2 two 4 ohm speakers that I want to connect to the Amplifier s , for testing purpose I’ve assembled one amplifier in Stereo with both 4ohm speakers, the amplifier runs smoothly with lower volumes but as expected starts to warm up when the sound is raised, so this is an option that I’ve discarded. Create a Stereo system using both amplifiers, each amplifier Mono bridged to one 4ohm speaker, and the input sound coming from one single 3pin audio source.

Today i built the socket into the back of my Fender Sidekick Reverb 65 combo amp, soldered the internal speaker wires to one side of the Cliff socket and soldered a pair of new speaker wires to the other side of the Cliff socket, connected the wire clips to the speaker and i was ready to go. First i tried the combo amp stand alone and everything worked fine as before.
